Strawberry Peach Cake – Light, Fresh & Fruity Summer Dessert

Strawberry Peach Cake is a soft, fruity dessert made with fresh peaches and strawberries, Greek yogurt, and a simple batter. A golden summer classic!

Ingredients
  

  • 1 cup white sugar
  • 2 oz salted butter, melted (¼ cup)
  • 1 egg
  • 1 cup plain Greek yogurt or plain kefir
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour (sifted)
  • 2 teaspoons baking powder
  • 16 oz fresh strawberries, hulled and halved
  • 2 medium yellow peaches, sliced

Instructions
 

  • Preheat oven to 350°F. Line and grease a 9x3-inch springform pan.
  • Whisk sugar, melted butter, and egg in a bowl until fluffy (2 mins).
  • Add yogurt and vanilla. Whisk 1 more minute.
  • Mix in flour and baking powder until just combined. Batter will be thick.
  • Spoon batter into pan. Spread gently.
  • Top with ⅔ of the strawberries and half of the peach slices. Press gently.
  • Bake for 25–30 minutes.
  • Remove cake. Add remaining fruit on top. Bake another 25–30 minutes.
  • Check center with a toothpick. Let cool slightly before serving.

Notes

Frozen fruit can be used—thaw and dry first.
Store in fridge up to 4 days or freeze for 2 months.
Great with a scoop of vanilla ice cream or whipped cream!
