  • 1 cup glutinous (sweet) rice
  • 1 1/2 cups water
  • 1 can (13.5 oz) coconut milk, divided
  • 1/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 ripe mangoes, peeled and sliced
  • 1 tablespoon toasted sesame seeds or crushed peanuts (optional)

Instructions
 

  • Rinse the glutinous rice several times until water runs clear. Soak for 30 minutes if you have time (can skip if in a hurry).
  • Drain the rice. Add to a pot with 1 1/2 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until water is absorbed and rice is tender
  • While rice cooks, pour 1 cup of coconut milk into a small saucepan. Add sugar and salt. Heat over medium-low, stirring until sugar dissolves. Do not boil
  • When rice is cooked, transfer to a bowl and pour the warm coconut mixture over it. Stir gently to combine. Cover and let sit for 15 minutes to absorb the flavors.
  • In the same saucepan, heat remaining coconut milk over low heat just until warm. This will be your serving sauce.
  • To serve, place a portion of sticky rice on a plate, arrange mango slices beside it, and drizzle with the warm coconut sauce.
  • Sprinkle with toasted sesame seeds or crushed peanuts if desired.
